
This a yummy & simple holiday dessert and is also a great alternative to pumpkin pie....
Ingredients:
2 cups half and half (for lower fat version, substitute portion with lowfat milk)
1 15 oz can pumpkin
1 cup packed light brown sugar
2 large eggs
1 1/2 tsp ground cinnamon
3/4 tsp cloves
1 tsp nutmeg
1/2 tsp ginger
1 1/2 tsp vanilla extract
10 cups 1/2-inch cubes bread (I used a mix of French and regular sandwich bread; can also use croissants, biscuits, egg bread, etc...)
1/2 cup golden raisins or cranberries (optional)
Whisk together half and half, pumpkin, brown sugar, eggs, spices, and vanilla extract in large bowl. Fold in bread cubes. Stir in golden raisins or cranberries. Transfer mixture to 9x13 baking pan. Bake at 350 degrees for about 35-40 min. I have tried adding fresh chopped apple chunks and it complements the pumpkin flavor nicely. Serve with ice cream or whipped cream. Enjoy!
