
Just messsing around and threw this together. Basically, picked up some garlic dough and flattened it out. Inserted finely sliced lean chicken thigh, half an onion, eggplant, broccoli, and some pesto sauce inside and then sealed it up. Brushed the outside with olive oil and cooked for 30 min at 400 degrees until light brown and crispy.
